Mini Christmas Cakes mmmmmm….

A couple of weeks ago when I made my Christmas cake I had a lot of mix left over – well my tin size was smaller than the recipe stated and, rather than adjust the mix I thought I would bake the extra in loaf tins and make mini Christmas cakes, here they all are fresh from the oven…

The round one is still waiting for marzipan and has a little drizzle of almond rum over the top each week – it smells amazing!!

But the two loaf size ones had to be dealt with early. I had planned to give one to my Spanish teacher on my last lesson before we broke up for Christmas and the others – well they would be presents too..

I managed to get some 4 inch boards while I was staying with my son and his wife in Swindon – there was a superb cake shop there..

Then I  cut the cakes down to size and covered them in marzipan and icing – the results were lovely even for someone with shaky hands….

Aren’t they sweet? And I loved piping the royal icing on them – its been a while since I did that.

I just love those little penguins!!!!

So now I need to get the big one finished – this weekend I think!!!!

Yumm…. I can just smell their deliciousness. You really did a super job decorating them, Kate. I’d never been able to do that sort of thing very well. Just lovely (and very tasty too I bet)!

Okay her’s something we don’t have in common. I’m a totally crap baker and couldn’t decorate a Christmas tree let alone a cake. Actually that’s a lie, I am awesome with tree’s but can’t bake to save my life. Very pwitty!

Ummm…yummy! Wish I could bake like that. Not for the want of trying, but the nearest I ever came to producing a ‘cake’ was a rice pudding made eons ago, in Domestic Science class at school. It was so sticky the teacher cut it into wedges – and gave me 2 out of 10 for effort. Back home again, my father gave me h*ll for wasting money: i.e., cost of ingredients – and my mother tossed it to the dog….
HE liked it!!!

Sistertex: Thank you … I used to make and decorate wedding cakes (in a former life) before I had problems with my hands – these little things were far from perfect in my eyes but everyone that has seen them thought they were lovely! And we have tasted the pieces that were cut off – the cake is gorgeous!!!!

Cortes – Why thank you sir!!! Any time, but you have a long flight ahead of you!!!!

Baino: Well there had to be some differences – I’ve always loved cooking… mostly making up recipes – but I do enjoy trying new ones too! My Christmas tree is ‘awesome’ too but I blogged about that last year… don’t want bore people with it again. Maybe I’ll just do a post on fairy lights…I’ve got hundreds of those!

Geri: Well at least the pooch enjoyed it – send your address I’ll happily post you some of this – it’ll take me a year to eat the big one!!!

Rummuser: Another one with a long flight but you are welcome – or maybe you should send your address – I could have the most travelled Christmas Cake for 2009!!!!!

Keiron: They are for the round one – so i haven’t made the icicles from them yet….. If it works I will have to post photos – it should look amazing!

Daddy P – Thank you – so am I …. I have never made them so small before….. but the big one is yet to come!!!!

Wow, didn’t you do well! I love the little mini cakes, and I think they make great gifts!

I have yet to make our cake, but I did buy half the ingredients today!

Oh, my, these are just adorable! You have such an amazing talent; I know a lot of people who would pay a pretty penny for one of those cakes!

Jay: thank you…. I think next year I’ll just make mini ones – they could prove to be easy Christmas gifts for all!!!! It would save me a lot of shopping time!

Ethelmaepotter: They really were fun to do – but the big one will be interesting – melted down clear mint sweets dripped over my rolling pin to make icicles – watch this space – if it works I’ll put a photo on here and if it doesn’t – well I might show it anyway …as a warning to others!!

I have not used Royal icing for years. One year I iced eleven 8inch cakes… a long story. Never again!

Such cute cakes Kate.

I used tolove making mine but these days b ut from M & S. Have not even opened this year’s as we are still eating Golden wedding cake!!

Thank you Barbara – my 92 year old uncle who was the recipient of one of these cakes came to my home for Christmas day and told me it hadn’t been cut because it was too pretty!! He went home with a big chunk of the larger one though – just to tempt him!!!
